I love coming up with creative snacks for Little E’s preschool class. Our first snack day, we made some clementine “pumpkins” so I was trying to come up with some ideas for something equally as cute this time. That’s when I came up with these cute traffic light peanut butter crackers.
The best part is, to make these tasty treats you only need three ingredients: colored chocolate candies, peanut butter, and some club crackers. Plus, they are something that Little E immediately recognized and was excited about.
I picked up a jar of the new Peter Pan Simply Ground peanut butter at our local Walmart. You can find it in the peanut butter isle. The new Simply Ground peanut butter is creamy while still having a bit of crunch. Even though it has the texture of ground peanut butter but spreads evenly so you don’t have any lumps or unevenness which makes it perfect for this snack. This means that you will never have to choose between crunchy or creamy again!
The club crackers are ideal for these traffic light crackers since you want something longer and narrow like a traffic light. Then, spread a moderate layer of peanut butter on the cracker.
After you spread the peanut butter on the crackers you will then want to gently press the colored chocolate candies into the peanut butter layer with red at the top, yellow in the middle, and green at the bottom — just like a traffic light! Be sure not to press too hard, otherwise you will break the cracker. I chose the chocolate candies that had some pretzels in the middle which makes them a little bigger and therefore stand out.
Then, just place the finished crackers on a plate or a cookie sheet and you have a perfect snack for your little one to take into school!
