I love baking delicious cookies at Christmastime. With two small children running around, however, I honestly don’t have time to bake everything from scratch. Some days I don’t have time to make anything from scratch.
The secret is, even though you may get a little help with the preparation it doesn’t mean that you can’t still be creative and make some awesome creations.
A delicious treat that I love making for the kids are chocolate chip cookie gobs. These gobs take the classic taste of Christmas cookies and blend it with the decadence of gobs.
I began by baking a batch of NESTLÉ® TOLL HOUSE Refrigerated Cookie Dough. I love how easy this cookie dough is to use. All you have to do is take it out of the fridge score along the lines and bake on a cookie sheet.
I was making this batch of cookie gobs for Little E’s preschool Christmas party, so I chose the Holiday Chocolate Chip cookie dough. This dough has a mixture of red, green, and the classic brown chocolate chips. In addition to the Holiday Chocolate Chip flavor, this year NESTLÉ has introduced the Hot Cocoa flavor which is made from real cocoa and stuffed with marshmallow. Trust me, it is so good!
Anyway, back to these cookie sandwiches.
While the cookies are baking and cooling you will want to make the cookie filling. To make the icing you will need:
- 1/2 All Vegetable Shortening
- 2 Tbsp. Butter
- 2 Tbsp. Flour
- 1 Egg White
- 2 C Powdered Sugar
- 2 Tbsp. Milk
- 1 tsp. Vanilla
You want to start by blending the shortening and butter in a mixer. Continue adding ingredients one at a time in the order listed. After all of the ingredients have been sufficiently blended you will have a thick, white icing.
Once you have made the filling, and the cookies are finished you will want to put the cookie sandwiches together. I used a decorating knife and spread a thick layer of the icing on the bottom side of one cookie. I then placed the other side of the cookie back on.
After you have assembled the sandwiches then all you have left to do is enjoy them! They are perfect for school parties, cookie exchanges, or just to eat with the family.
