Life as a single mom with two small children can be chaotic. Between juggling daycare, preschool, sports, and everything else, I admit that I am not always so good when it comes to meal planning.
Often instead of thinking ahead and planning meals for the week, I tend to take the path of least resistance which unfortunately often involves take-out. This, of course, isn’t very healthy or budget friendly.
One of my hang-ups is with two picky eaters is that I don’t like cooking for just myself or having the same leftovers for a week in a row. This is, until I discovered a new way of thinking.
I realized that instead of taking all the effort to make a tiny meal for just myself, I could instead make a family-sized meal and freeze the leftovers for later. That way, on the days when I don’t feel like cooking, instead of going for takeout I can just pull out one of the freezer meals.
Freezer meals do take a bit of preparation, but the payoff is worth it in the end. For me, there are a few key elements involved in making these meals a success.
- Make a family-sized meal so that there are enough for leftovers. You might want to even double or triple a recipe.
- Make sure that you have enough space in your freezer. This only works if you have the place to store the food.
- Choose foods that will freeze well. Not everything lends itself well to being a freezer meal.
