I can barely believe school started again yesterday. With my son now in kindergarten, the school nights have officially begun.
When school is in session it seems as if there are never enough hours in the day. Between school, activities, and homework it often leaves little time for other things such as elaborate meals. Thankfully, I’ve developed a bunch of go-to recipes for those crazy weeknights.
One of my favorite easy weeknight meals in Tyson® Southern Style Tenderloins with Ham and Cheese Potato Pancakes. It is so easy to put together when time is tight and it tastes delicious. Plus, the kids love it as well.
The Tyson® Southern Style Tenderloins are so easy to prepare since they are already battered, breaded, and fully-cooked with a peppery seasoning. Plus, they have 0g trans fat per serving and no preservatives. Did I also mention that they are 100% all-natural?
So while the tenderloins are heating in the oven I like to make some Ham and Cheese Potato Pancakes to go with them.
Making Ham and Cheese Potato Pancakes
These potato pancakes are also really easy to prepare. You will need:
- 1 ½ cup finely chopped ham
- ⅓ cup finely chopped green onions
- 3 cups instant or refrigerated mashed potatoes
- 1 cup shredded mild cheddar cheese
- 2 large eggs
- ½ cup all purpose flour
Now it’s time to make the pancakes! Spray a large nonstick pan with cooking spray and heat to medium.
Combine the finely chopped ham and green onions and saute until the mixture is warm.
Using a large mixing bowl, combine the cooked ham and onions with potatoes, cheese, eggs, and four. Mix into a batter.
Clean out the skillet (or grab a fresh one!) and spray with cooking spray. Pour about ¼ to ⅓ of a cup of batter into the skillet and spread it so that the pancake is about 3 inches wide. Cook for three or four minutes on each side or until golden brown, warmed throughout, and slightly crispy on the edges.
Once the pancakes are done, serve them alongside the Tyson® Southern Style Tenderloins and drizzle them both with some honey mustard for a delicious, and easy, weeknight meal that the whole family is sure to enjoy.
