Having a family dinner in my house is very important. It is a time to unwind together, spend time together, and talk about our days. It is something that was always important to my mom when I was growing up, and it is a tradition that I wish to continue.
The problem is, my life is pretty different than what it was when I was growing up. As a single mom raising two young boys, I don’t have a lot of time to make elaborate meals. I am more of a slow cooker mom.
One of the first recipes that I learned to make while I was in college was a balsamic baked chicken. This chicken is so easy to make as all you have to do is put chicken breasts in an oven-safe dish and coat it with a bottle of balsamic dressing. Bake on 350 degrees for several hours, turning the chicken every hour and a half. This is a great, painless way to make some delicious chicken.
While the chicken is cooking, you can prepare a large, family-style salad. Of course, you want to make a tangy and delicious dressing to go with the salad which is why I love this lemon balsamic dressing. Plus, it only takes 5 minutes to make.
To make the lemon balsamic dressing you will need:
- 3 tablespoons fresh lemon juice
- 2 teaspoons of balsamic dressing
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 garlic clove, minced
- 1/2 cup extra virgin olive oil
In a small bottle or bowl, mix all of the ingredients together. They will separate into a suspension, so you will want to stir or mix right before serving.
Once the chicken is finished, use a fork to shred the chicken. After you have shredded the chicken, place it on the top of the large bowl of salad.
Now as much as I love family-style salads, I like something that will take the salad to the next level (as well as something I can snack on while I’m making dinner!). This is why I love Sahale Snacks.
