I’m so excited that we are now deep into fresh produce season! Whether it is fruits and vegetables from the garden, farmers market, or even your grocer, the opportunities to make delicious, homemade foods are endless.
One of my favorite summer foods to make is Garden Salsa. This salsa is made from fresh vegetables and is totally delicious! Plus, it doesn’t require a ton of ingredients.
Fresh Tomato Garden Salsa
All you will need is:
- 3 medium-sized tomatoes (diced)
- 1 medium red onion (diced)
- cilantro (chopped)
- 1 clove of garlic (minced)
- 1 tsp lime juice
- 1 tsp salt
You will probably also want to have a chopper or a food processor on hand.
I began by using a mini food processor to dice the red onion and tomatoes. If it looks like there is more onion than tomato, go ahead and dice a second tomato.
Mix the tomato, onion, and cilantro into a large bowl. You will also want to add in one minced clove of garlic (note, this is just one clove, not the whole bulb!).
Next, you will want to add one teaspoon of salt and one teaspoon of lime juice to the mix. You can always use bottled lime juice, but in keeping with my fresh ingredients these, I decided to squeeze a fresh lime. Plus, you can use the other half of the lime for some limeade!
The salsa as it stands is a mild version. If you like your salsa with a little heat, then go ahead and add in some minced jalapeños or chili powder.
I will note that once the salsa has been mixed together that the juice can separate out. Its for this reason that I love keeping the salsa in a canning jar. Just give the jar a shake and the salsa is ready to serve.
Additionally, since the salsa is made from all fresh ingredients and has no preservatives you will want to keep the jar refrigerated and eat it within a week. It’s so good though that I doubt it will last a week!
