Can you believe it’s 2018? I’m so excited to see what this year holds. Since it is a time of new beginnings, one of my resolutions for this year so to cook more at home.
I’ll admit that I have a bad habit of taking the easy way when it comes to making meals. With two picky eaters at home, when I do make meals, neither one of the kids seem to want to eat what I make and I don’t like cooking for myself, so I take the path of least resistance.
That’s about to change.
One of my barriers to cooking at home has been finding time to go grocery shopping. When I take the boys, I am not able to concentrate on what I need to get. To find time to go without the boys is also a challenge.
When I found out that our local Giant Eagle is now offering Curbside Express, in particular with delivery, I was ecstatic. It was as if my grocery shopping prayers were answered.
This service is beyond easy to use. All you have to do is go online, pick your store, fill your cart with any products you need or want, select a time slot for delivery, and then just be home to answer the door.
An actual person, called a personal shopper, will choose your groceries and will even take into account special instructions you give. You can even order heavy and bulky items that would otherwise take up the whole cart or be a pain to transport.
I was planning on making a shrimp and bacon fettuccine Alfredo meal so I was able to order all of the ingredients I needed, such as bacon, shrimp, pasta, the produce, whipping cream, and even the spices. The best part is I didn’t have to worry about forgetting anything.
Bacon and Shrimp Fettuccine Alfredo
While you are planning your online order, be sure to put the following items in your cart:
- Bacon (6 slices)
- Shrimp (1 pound)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 yellow onion
- 1 tomato
- 3 tsp minced garlic
- 2 cups heavy whipping cream
- fettuccine (1 pound)
- Parmesan cheese (1/2 cup)
- Parsley (1/2 cup, fresh or 1/4 cup, dried)
Begin by chopping the bacon and detailing the shrimp. The cook in a large skillet until the bacon and shrimp are thoroughly cooked. Add in the salt and pepper. Then set aside in a separate bowl.
Dice the tomato and the half of the onion and place in a sauce pot. Then add in the garlic as well as the two cups of whipping cream. Cook until a thick consistency.
While you are cooking the whipping cream mixture, bring a pot of water to a boil in order to cook the fettuccine.
After the pasta has cooked, add it to the whipping cream mixture along with the Parmesan cheese and the parsley. Top with the bacon and shrimp.
This meal turned out delicious and I was so impressed how easy it was to shop for all of the ingredients I needed (plus stuff for some other weeknight meals).

This year, in addition to eating in more, I want to take control of my time so that I have time to spend on the things that I love most — such as my family.
