The weather is getting colder again. Last weekend we actually had snow flurries. It is obviously time to start breaking out the coats, books, and sweaters again in order to keep warm! Speaking of warm, one thing that I love on a cold winter morning are some delicious, hearty pancakes. Something about them just makes me feel warmer inside. So does the pumpkin spice flavor.
Recently, while shopping at our local Giant Eagle I discovered the Market District seasonal fall flavors. With products such as apple butter dessert and breakfast syrup, ginger snap granola, and salted caramel apple cider, I had the idea to create some pumpkin spice pancakes. What says warmth better than pumpkin spice and pancakes?
[yumprint-recipe id=’6′]I started by mixing up some pancake batter as I normally would. I then added in approximately one cup of pumpkin. Then mix well so that the batter is consistent.
My kids love when I make them pancakes with chocolate chips in them, so when I found some pumpkin spice morels at Giant Eagle I decided to buy some of them to also add to the pancakes. Just drop the morsels into the batter as the pancake is cooking.
Once the pancakes are done cooking, the real deliciousness begins. I topped the pancakes with some of the apple butter syrup, ginger snap granola, and some whipped cream. There are so many options when it comes to toppings with the Giant Eagle Market District fall flavors. In addition to the ginger snap granola and apple butter syrup I chose, Market District also has a pumpkin cranberry granola and a pumpkin spice syrup.
The best part is that you can pair these pumpkin spice pancakes with one of Market District’s three flavors of apple cider. The apple ciders come in salted caramel, orange spice, and pear ginger cider. The best part is that these ciders can be served either hot or cold, and are delicious either way! Just pop a cup or a mug in the microwave for 30 seconds and enjoy a delicious beverage in the evening (or for breakfast).
These pancakes are very rich, so you might not need to make as many as you normally would. Regardless, my kids loved the pancakes and it was a great way to sneak in some extra servings of fruit (yes, a pumpkin is a fruit!).
You can pick up any of these fall Giant Eagle Market District products in the special fall flavors display at your local store. In addition to the products that I already mentioned, Market District also has some pumpkin tortilla chips which taste delicious when you pair it with some peach or mango salsa.
