My husband loves fall. It isn’t the leaves, or the change in weather, or even the impending arrivals of the holidays. No, my husband loves fall because it is pumpkin pie season. In fact, come this time of year it isn’t unusual for Mike to bake several pumpkin pies just for our family. Not for Thanksgiving, and certainly not to take with us to a party, but just to eat at home. Yep, he likes pumpkin pie that much.
It turns out that Mike isn’t the only one in the house that is a huge pumpkin pie fan. Little E and Baby R also love their pumpkin-flavored products, including pumpkin pie (of course!). The only problem is that pumpkin pie can be pretty high in fat and calories so I’ve been looking for an alternative, particularly for the kids. This is why I am loving these 30-second pumpkin pies using Reddi-wip®, Keebler® Ready Crust® Mini Graham Cracker Pie Crusts, and Oikos® Pumpkin Pie Greek yogurt.
Not only are they a lower-calorie option, but they are super-easy to make and the whole family loves them. I can whip up one of the mini pies when Mike and I are relaxing in the evening, for dessert after dinner, or even as a snack for the boys.
I mix vanilla pudding with a container of the pumpkin pie Greek yogurt to give it a rich, creamy taste.
After it has a smooth consistency, spoon it into the mini pie crust.
I crumble up some graham crackers very finely and just sprinkle a light coating on top of the yogurt once it is in the pie crust.
If you are going to serve it right away, you can go ahead and top with Reddi-wip® and serve. If you are going to be serving it after dinner, chill in the refrigerator so that the filling stays firm. Top with the Reddi-wip® just before eating. You can even top it with some cute novelties such as candy corn or even candy pumpkins.
So I mentioned how much Mike loves pumpkin, and although I enjoy pumpkin also, I prefer flavors such as caramel and chocolate. For individuals with a palette such as mine, Dannon® makes a Light & Fit® Greek Caramel Apple pie yogurt. This is perfect to mix with either chocolate or vanilla pudding and topped with the Reddi-wip®.
No matter which mini pie you choose to make, the chocolate caramel apple pie or the pumpkin pie, they are both delicious! Plus, they are great for taking in for school snacks or just to eat at home. Little E loves helping me make these, and it is a great way for him to “help” out in the kitchen!
You can pick up the seasonal Light & Fit® Greek Caramel Apple pie yogurt, Dannon® Oikos® Greek Yogurt pumpkin pie, Keebler® Ready Crust® Mini Graham Cracker Pie Crust (6 count), and Reddi-wip® at your local Walmart.
